Chris Merriam

Born in Maine, and attended high school in Bowling Green, OH. Chris moved to Maine to attend University of Southern Maine and started cooking as a summer job in local restaurants. After taking some time off to sail around the world on a schooner, Chris returned and began culinary school at what is now Southern Maine Community College.

Graduated with honors, he started with Marriott corporation during the opening of Marriott at Sable Oaks as a Manager in Training. Chris transferred to the Newport Marriott in Rhode Island as the Banquet Chef and worked there for 3 years and was promoted to Executive Sous Chef. In 1993, Chris returned to Portland as Executive Chef at the Portland Marriott at Sable Oaks and has since taken on the additional responsibilities of Food and Beverage Director.

Chris is a Certified Executive Chef through the American Culinary Association and President of the local ACF chapter. Chris has served on many task forces, opening new hotels and large conventions. The Portland Marriott at Sable Oaks continues to rank highly in Marriott’s guest satisfaction and was awarded the American Culinary Association’s Achievement of Excellence Award in Food Service in 2013. Chris is a skilled ice carver and certified judge through the National Ice Carving Association.

Tim Pierce

Executive Chef of the Samoset Resort since 2002

Chef Tim is originally From Boothbay Harbor, Maine but has previously worked in Vermont and New Hampshire, including at the Christmas Farm Inn in Jackson and the former Balsams Grand Resort in Dixville Notch.

Tim enjoys competing in and judging ice carving competitions throughout New England and has won numerous awards. While at the Balsams, Chef Pierce honed his talents while mentoring and teaching culinary arts and ice carving to over 40 apprentices.

He was also able to co-coach four culinary teams to state titles, as well as coach the 2002 National Collegiate Ice Carving Champions. Tim also teaches ice carving locally to up to 30 residents for the Camden Winterfest and judges ice carving for the National Ice Carving Association. He has judged in Stowe, VT for the last 10 winters and was the Lead Judge at the National Ice Carving Championships in Branson, Missouri in 2012.
